Black Cardamom is not a substitute for green cardamom at all, but has a distinct flavor all its own. A coarse brown pod containing about 40 seeds, the flavor profile combines mild camphor notes with distinct flavors of earth and smoke. Black cardamom makes a sensational addition to hearty soups and stews. The pod husks are an exotic smoking agent when soaked and thrown over hot coals on the grill.
