Merguez is from the Arabic word Mirqaz “sausage” and is popular in N. Africa, Belgium, and France. Its spicy superior farm lamb is ground with chili, peppers, and garlic and then stuffed in delicate lamb casing. Our foreign customers and culinary professionals love this style.
